Blueberry White Chocolate Cinnamon Rolls

Ingredients
Blueberry Jam
  • 2 cups blueberries
  • 1/4 cup sugar
  • 2 tsp vanilla
  • 2 tsp lemon juice
  • 2 tsp corn starch
Dough
  • 1/2 cup warm water
  • 1 TB yeast
  • 1 TB honey
  • 3 1/4 cup kodiak cakes buttermilk power cakes mix
  • 1/4 tsp salt
  • 3 TB maple syrup
  • 1/4 cup milk
  • 3 TB butter, melted
  • 1 TB vanilla
  • 1 egg
  • 1/4 cup white chocolate chips
Icing
  • 2/3 cup greek yogurt
  • 1/8 cup sugar
  • 1/4 cup milk
Instructions
Blueberry Jam
  1. Heat saucepan over medium.

  2. Add in all the ingredients to the saucepan and allow the berries to release their natural juices (this should take 5-7 minutes). 

  3. Mash the berries until smooth (or leave some berries unmashed for texture!) with a fork or immersion blender.

  4. Bring to a boil for 3-4 minutes. Remove from heat and let it cool in refrigerator.

Cinnamon Rolls
  1. Dissolve yeast and honey in warm water. Let rest for 5 minutes.

  2. Combine kodiak cakes mix, salt, maple syrup, milk, melted butter, vanilla and egg.

  3. Add yeast mixture and mix {If you have a mixer with a dough hook use that, your hands or a spatula will work just fine as well}. If dough is sticky add a bit more kodiak mix until dough is no longer sticky to touch.

  4. Knead the dough for 3-5 minutes. Cover with plastic wrap and allow it to rest in a warm area for 15 minutes.

  5. Roll out the dough into roughly a 12x15 rectangle. Spread  blueberry jam in the middle, leaving 1 inch around each side free of filling. I recommend setting aside some of the filling to put on the top after baking! Sprinkle with white chocolate chips.

  6. Roll dough up lengthwise, tucking it tightly as you roll.

  7. Cut into 8 equal pieces and place 1 inch apart on a greased baking dish. 

  8. Cover with plastic wrap and let rise for 1 hour. 

  9. While rolls are rising, prepare the icing. Mix the greek yogurt, sugar and milk together. Add more milk to reach desired consistency.

  10. Preheat oven to 350 and bake for 16-18 minutes.

  11. Allow rolls to cool and then top with extra filling and drizzle with icing!
