It’s been a while since I posted a recipe but this one is more than perfect to come back to posting more recipes in the near future, hopefully! Even though the holidays are over the cold weather is here to stay for a bit longer. I’ve made this recipe twice now and it is one of my new favorite chili’s and it is packed with delicious nutrients! It will for sure have your kitchen smelling oh so good when you get home 🙂
This recipe only takes ~30 minutes to throw together the night before and if your lucky it will leave you with lots of leftovers as well!
- 1/2 TB olive oil
- 2 onions, diced
- 1 lb ground turkey/meat of choice
- 1 bell pepper, diced
- 5 stalks celery, chopped
- 1 bag mini carrots
- 2 medium sweet potatoes, diced
- 1 can beans
- 1 can diced tomatoes
- 1 cup tomato sauce
- 1/2 cup chicken broth
- 2 tsp chili powder
- 2 tsp cumin
Heat a skillet over medium. Coat with olive oil and add diced onions. Cook for 2-3 minutes then add in ground turkey and spices. Cook until meat is cooked through.
While meat mixture is cooking. Prepare other items.
Pour meat/onion mixture into a slow cooker. Mix in bell pepper, celery, carrots, tomatoes, sweet potatoes, beans, diced tomatoes, tomato sauce and chicken broth.
Cook on low for 6-8 hours and serve!
