White chocolate blueberry is one of my favorite flavor combinations + overnight oats is one of my favorite breakfast to take on the go but this baked oatmeal allows me to make breakfast for the whole week at the same time!
I love the melting white chocolate chips paired with sweetness from the blueberries and topped with my favorite nut butter! I often pair it with a protein source to keep my fueled during my busy mornings at work.
This recipe could easily be used with other flavors as the base will always be the same! Other ideas could be strawberry chocolate chip, peanut butter banana or dried cranberry white chocolate.
- 2 1/2 cups oats
- 1 1/4 cups milk
- 1 cup applesauce or mashed banana
- 2 eggs
- 2 tsp vanilla
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup white chocolate chips
- 1 cup frozen blueberries
Preheat oven to 350.
Mix together applesauce/bananas, milk, eggs and vanilla in a bowl.
Add in dry ingredients and mix thoroughly. Fold in white chocolate chips and blueberries.
Pour into a 9×13 baking dish and bake for 35-40 minutes.
Best served warm with your favorite nut butter!
