Simple and sweet. This bread has ever bit of fall flavor to it.
In case you haven’t notice, pumpkin goodies have gone gang busters on hitting the shelves and kitchens as fall is upon us! Yes, I am one of those you wants to buy all things pumpkin and I get so excited when they start reappearing at the stores. I have been itching to utilize my loads of pumpkin butter in some way so when my professor said my classmates and I were going to have a breakfast potluck tomorrow I knew I had to bake up something yummy. I also needed an excuse for a study break 🙂
I wanted to fancy this bread up just a bit so I got the inspiration to throw a chocolate swirl in there. Plus chocolate + pumpkin = a bomb combination. To finish it off I added a sweet maple yogurt drizzle because everything taste better with a little icing on it right?!
If you have an impulse need to do some baking or need a baked item to bring to a holiday party grab yourself the ingredients, throw on an apron and get to baking! Oh and did I mention the base of the recipe comes from Kodiak Cakes. If you haven’t tried their products before you can find them at your local grocery store. - 2 cup Kodiak Cakes Honey Wheat Mix
- 1 1/2 tsp baking soda
- 1 tsp pumpkin pie spice
- 1/2 tsp ground cloves
- 1/2 tsp salt
- 3/4 cup pumpkin puree
- 3/4 cup milk
- 1/2 cup brown sugar
- 1/4 cup pumpkin butter
- 1 egg
- 1/3 cup greek yogurt
- 2 tsp sugar
- 2 blocks chocolate bark
Preheat oven to 375.
In a mixing bowl combine kodiak mix, baking soda, spices and salt.
In a separate bowl mix together pumpkin puree, milk, brown sugar, pumpkin butter and egg.
Combine wet and dry ingredients until fully incorporated.
In a microwaveable safe bowl, melt chocolate bark.
Pour in melted chocolate to bread batter and gently swirl into batter. Do not mix too much as you want the chocolate to be swirled throughout the bread.
Pour batter in a greased loaf pan and bake at 375 for 45 minutes.
While bread is baking, combine greek yogurt and sugar. Add a splash of milk until desired consistency for the drizzle.
Once bread is finished cooking allow it to cool completely before icing and slicing!
