It is officially October which means Fall is in full swing and so is crockpot meals! I love being able to throw stuff into the crockpot and come home to a kitchen smelling delicious and dinner is on the table is less than 10. Not to mention all the yummy leftovers most crockpot meals make!
One of my all time favorite recipes in the fall is this homemade chicken noodle soup. It was one of the first recipes my mom would make when the temperatures started dropping when I was growing up as a kid. Clearly that tradition stuck because it was one of the first recipes I made this fall!
All it takes to have your kitchen smelling just like mine is a little prep work the night before. I am always rushing out the door in the morning so I had my onions, celery and carrots all ready to go in my crock pot. My spices and chicken broth were laid out on my counter and my chicken was ready to go in the freezer. All I had to do was throw the chicken in and pour in the spices and chicken broth then I was out the door and on with my day!
I generally let my chicken and veggies cook for 6-8 hours on low/medium until the chicken is basically falling apart. Then I throw in some frozen egg noodles, turn the temperature up to high and let the noodles cook for 45-60 minutes! Then grab a spoon and dig in!
I always like to enjoy mine all snuggled up in a blanket next to the fire place. There is just something about a warm delicious dinner and being able to relax after a long day! I’m sure most would agree with me on that one 🙂
- 1 bag baby carrots
- 1 medium onion, chopped
- 3-4 celery stalks, chopped
- 2-3 chicken breast, frozen
- 32 oz chicken broth
- 1/2 cup white cooking wine
- 1 package of frozen egg noodles
- 2 TB Italian seasoning
Layer carrots, onion and celery on bottom of crock pot.
Top with frozen chicken breast and seasoning. Pour in chicken broth and white cooking wine.
Cook on medium low for 6-8 hours (until chicken is falling apart).
Shred chicken breast and pour in egg noodles. Stir together.
Cook on high for about 1 hour or until egg noodles are cooked.
If you have leftovers this recipes freezes very well! Pack in airtight containers and place in refrigerator the night before to thaw out!
