Have I mentioned how much I love the fresh flavors of summer and easy dinners? There is just something about enjoying a delicious dinner that is full of fresh flavors and provides satisfaction. As I was making a list of recipes I wanted to have for dinner this week I noticed some white fish in the freezer that hadn’t been used yet. So I got my creative juices flowing and came up with fish tacos! We kept it pretty simple but that didn’t mean we skimped out on good taste. Sometimes it can be the simple and easy dishes that taste the best.
I also had about 1/4 of my Trader Joe’s green goddess dressing left that I wanted to utilize somehow. Let me talk about this dressing real quick but it is AMAZING! I spotted it a few months ago at a Trader Joe’s in St. Louis (sadly, we don’t have one here in Columbia, Mo) and had to give it a try. It is an avocado based dressing with apple cider vinegar, green onion, lemon juice, chives, basil & garlic. It goes with so many things!
I’ve put it on salads, grilled chicken, dip for chips and tacos. The only down fall is I wish there was more! The bottle only holds 1.5 cups and serving size of 2 TB just isn’t enough for me sometimes. So I recommend picking up a few because I know your going to love it just like I do! I knew I wanted some crunch on the taco since the fish would be smooth and flaky. I settled on buying a coleslaw mix that I would throw the green goddess dressing on. This would serve as the base of the taco! Not only did the coleslaw add some crunch but it added some color with the cabbage and carrots.
I love seeing multiple colors in my meals because we often eat with our eyes first! If the dish doesn’t look good we already have decided before even taking a bite it probably isn’t going to taste great BUT if the dish catches your eye right off the bat this can enhance the satisfaction the meal provides for you. Satisfaction is a BIG component on what goes into my decision on what to eat. I want to eat a meal that satisfies me. If I know I am craving a particular food, texture or taste and I don’t allow myself to have it I will still be craving that after finishing whatever food I chose. This normally would lead to me to snacking on other foods to fill that “void.” So I always try to find meals that will satisfy me in that moment! Most of the time those meals include lots of veggies because I love them! It may look different for you because everyone has different taste buds. Find what works for you and stick to it!
We finished off the tacos with a few avocado slices. It paired perfectly with the crunch of the coleslaw and the flakiness of the fish. - 2 white fish filets
- 1 package coleslaw mix
- 1/4 cup Trader Joe's green goddess dressing
- 4 small flour tortillas
- 1 avocado, sliced
- salt and pepper
Heat a skillet over medium. Season your fish with salt and pepper (or other desired spices).
Place fish in pan and sear for 3-4 minutes each side. Depending on thickness of fish it will cook pretty quick! Once fish appears flaky it is most likely finished.
Set fish aside to cool. Mix green goddess dressing with coleslaw mix.
Spoon coleslaw over flour tortilla. Top with fish and sliced avocado.
Sprinkle with salt and pepper. Enjoy!
