Quiet and relaxing mornings are far and few between for me. My days are normally filled with morning workouts, work or school thus I rarely have time to make breakfast in the morning. That is why I spend a portion of my Sunday’s in the kitchen preparing for the upcoming week! One of my favorite breakfast dishes to make is this breakfast casserole.
My mom use to make it all the time when I was growing up and it’s perfect for a on the go breakfast to kick start your day. The best part is it requires little cooking skills to throw together so anyone can do it. It is also very versatile in what you flavor combinations you can do and a great way to sneak in some extra veggies. I normally will add different veggies or meat depending on what is on sale that week. This helps add variety to the dish so I don’t feel as it I’m eating the same thing every week for breakfast! I love to pair it with a homemade muffin or bread for a complete breakfast 🙂
- 10 Eggs
- 1 cup Milk
- 1 cup Meat of choice (ham, turkey sausage, bacon)
- 1 cup Veggies of choice (onions, bell peppers, mushrooms, tomatoes, squash)
- 1/2 cup Cheese
- 4 slices Whole wheat bread
- 1/2 tsp Salt
- 1/2 tsp Pepper
Preheat oven to 375.
Whisk together eggs, milk, salt and pepper.
Cook chosen meat (if uncooked).
Spread meat and veggies on bottom of 9x13 greased baking pan.
Place Cubed bread slices over meat and veggies. Pour egg mixture on top.
Bake at 375 for 40-45 minutes or until center is firm.
Nutrition facts based on 8 oz of cubed ham for meat of choice. Can also sub 6 eggs + 6 egg whites if desired.
